Your 45-minute roasting session kicks off at the Hilltop Welcome Center with captivating stories about Paniolos and Kona Coffee history. Working alongside an expert Paniolo roaster, you'll select your own green coffee beans and roast them over open flames, learning to use all your senses — listening for the perfect crack, watching for color changes, and breathing in those incredible aromas.

Throughout the session, you'll enjoy unlimited tastings of five premium Kona Coffees, discovering the distinct flavors that put this region on the coffee lover's map. The best part? You'll take home your own custom 4-ounce roast, personally named and sealed as a one-of-a-kind souvenir. Each experience also includes a specialty beverage sample from the Konalani Coffee Bar or handmade candies, plus guided storytelling that brings Hawaii's Paniolo cowboy heritage to life.

The paniolo coffee roasting experience Holualoa runs Monday through Saturday with three daily sessions: 10:15 AM, 12:15 PM, and 2:15 PM from $85. You'll need to be at least 13 years old to participate, and anyone under 18 must bring an adult. Each intimate session welcomes just 6 participants maximum, so advance reservations are essential.

Plan to arrive 10-15 minutes early at the Hilltop Welcome Center for check-in.
